We rediscovered Vienna’s constantly evolving dining scene with great relish. Chefs prioritize the incorporation of new techniques and flavors into traditional Austrian dishes, creating a fusion of old and new. Locally sourced ingredients and natural wines are center stage. Whether you’re looking for classic Viennese cuisine or something more innovative, there are plenty of options, with some of the best dining options located outside the city center. Below are a few of the restaurants that stood out on our most recent trip.

Opened at the end of 2022 without much fanfare, this stylish restaurant (also known as C.O.P.) has become a hot-spot destination for locals seeking a festive yet laid-back atmosphere. The dining room is tastefully simple, with white marble tables and bentwood Thonet chairs. As we settled in, our eyes gravitated toward the massive wood-fired oven, which dominates most of the kitchen. The unfussy dishes feature regionally sourced ingredients (the long list of producers is noted on the nightly changing menu) cooked over an open flame. One of chef-founder Elihay Berliner’s signature dishes, the raw Baltic herring marinated in paprika and topped with pickled onions fermented in-house, was exceptional. The dish paired perfectly with the freshly baked focaccia. Save room for the crêpes Suzette. Service is low-key and friendly, and the charismatic Berliner stopped by our table to introduce himself and explain his “low intervention” cooking style. We had a lovely time at this dynamic establishment near the Stadtpark, and we look forward to seeing what Berliner cooks up next time we are in town. Closed Sunday and Monday.
