Vilnius, the capital of Lithuania, was declared a UNESCO World Heritage site in 1994 due to the magnificent architectural heritage of its medieval Old Town. The Palace of Pacai, which dates from the 17th century, has recently been the subject of a five-year renovation by Lithuanian architect Saulius Mikštas. It opened in May as Hotel PACAI, a stylish 104-room urban retreat.
Claus Meyer, the co-founder of the celebrated restaurant noma, in Copenhagen, has supervised the two New Baltic dining concepts, including 14 HORSES — the structure of the present-day brasserie once housed the Pacai family’s stables — which serves a local and seasonal menu inspired by Lithuanian and Baltic culinary traditions. A spa now offers massage, sauna and a hammam. And the property’s central courtyard is intended to become a focus for artistic and cultural events.
