Destination Dining in Upstate New York

One of the joys of traveling around New York State is discovering just how varied and ambitious the dining scene is. Restaurants range from cozy country pubs to buzzy wine bars that wouldn’t feel out of place in downtown Manhattan. In the Hudson Valley especially, the abundance of small farms, cheesemakers and specialty-food purveyors has helped fuel a culinary renaissance.

It’s not unusual to stumble upon a farmhouse in the middle of nowhere serving dishes that are as inventive as anything you’ll find in America’s culinary capitals. Increasingly, chefs are trading cramped urban kitchens and high rents for open space and creative freedom. Over several meals, we relished dishes that celebrated local ingredients and elevated farm-fresh produce into fine-dining compositions.
